For the good of Earth, we believe all food companies should push for sound agricultural practices and responsible use of resources. As a result, Défoncé uses only sustainable and responsibly sourced ingredients, a foundational effort that does not reflect the one-stop-shopping that defines so much food production. The work demands more time, and does not always exactly hum lullabies to the spreadsheet. But it introduces us to (and supports) so many fascinating and principled artisans, and it results in the finest infused chocolate in California.
Finding a Cure
We proudly donate to St. Jude Children’s Research Hospital, which advances cures, and means of prevention, for pediatric catastrophic diseases through research and treatment. Consistent with the vision of St. Jude’s founder, Danny Thomas, no child is denied treatment based on race, religion or a family’s ability to pay.
About Our Cannabis
The best wines embrace the concept of single-origin. The same goes for things like coffee and chocolate. The idea? Create foods that exhibit terroir. A coffee comprised 100 percent of beans from one portion of a coffee plantation in Ecuador will taste different from any other coffee. The beans reflect the plantation’s soil, its microclimate, the native flora and fauna, and more. That jaw-dropping Domaine de la Romanée-Conti from Burgundy? The same eight parcels of land have been growing grapes since 1241, and nothing else tastes like that pinot noir. We believe the same holds true for cannabis. When cannabis like ours is grown outdoors with immense care, it too exhibits terroir. The cannabis used in our edibles, grown in the Sierra Nevada Foothills, carries unique flavors and aromas that come through, subtly, in our chocolate. For our chocolatiers, the magic happens when they pair such high-quality cannabis with our superb chocolate—ideal flavor pairings emerge, combinations of chocolate and cannabis that are rooted in California fields and individual cocoa plantations around the world.
Biodynamic farming techniques use complex composting methods to build soil so microbially abundant that fertilizer is not required to grow cannabis—nearly unheard of in cannabis farming. The method leaves the smallest footprint possible for a farm. In fact, unlike most farming techniques, it improves overall soil health. And boy does the method nurture vital cannabis plants, some of which have been measured 16 feet tall and 30 feet wide.
Our partnership with CW Analytical Laboratories is the highest level of quality assurance we can provide to our customers. Each cannabis sample must undergo the following tests: cannabinoid & terpenoid profiling, microbiological/residual solvent analysis, mycotoxin screening, and pesticide screening. The rigorous process demonstrates our commitment to safety, effectiveness, and overall quality.
Clean Extraction Process
Supercritical CO2 extraction holds several advantages over other extraction methods, such as those using alcohol and hydrocarbons. Among the advantages:
- CO2 is nontoxic and approved by the FDA for use in food products.
- It is commonplace—our bodies produce it when we breathe, and it is commonly used in things like carbonated beverages.
- CO2 is solvent-free. Other extraction methods rely upon solvents like propane and butane, hexane and pentane, or ethanol/alcohol mixtures. These methods demand additional distillation or purging to separate the harmful solvents from the cannabis oil. But CO2 has a low boiling temperature, and wants to be a gas at room temperature. As a result, it naturally separates from the extracted oil—it’s the same process that leads to a soda going flat.
- CO2 is cold. Botanical oil extractions can be done at room temperatures that are native to the botanical material, minimizing thermal degradation of the plant material and the extracted oil.
CO2 is environmentally friendly. Industrial CO2 for extractions comes from byproducts—primarily hydrogen and ammonia manufacturing and fermentation for ethanol. CO2 used for extractions does not contribute to the overall atmospheric CO2 levels.
